In the manufacture of food concentrates by means of membranes, the displacement process initiates start-up or shut-down sequences and aims at the complete and quick removal of the product from the plant. However, the hydrodynamic processes determining the residence time behavior of the product in a plant equipped with spiral-wound membranes are barely investigated. Thus, this thesis aims at clarifying the impact of the process conditions and the flow patterns on the displacement process. Analyses of the experimental results are based on response surface methodology and mechanistic models.
