Zusammenfassung / Abstract

The surface activity of proteins enables them to stabilize gas-liquid interfaces, which leads to foam formation. This thesis represents a step towards clarifying the non-resolved questions about the mechanisms happening during the adsorption process. Therefore, the foaming behavior of model proteins was analyzed in foam fractionation experiments. That investigation on macroscopic level was extended by several spectroscopic protein analytics, providing insight on molecular level. The secondary structure of proteins was analyzed in bulk liquid and when adsorbed at the gas-liquid interface. Thus, structural changes could be analyzed, making one step further to bridge the gap between the macroscopic foaming properties of proteins and molecular mechanisms occurring during absorption.
