In the present dissertation the fate of polybrominated diphenyl ethers (PBDEs) during the cooking of fish and the treatment with UV-light was investigated. In cooking experiments with fish, partial volatilization and transformation of selected PBDE congeners was observed. During the treatment of PBDEs with UV-light, bromophenols were detected as transformation products of PBDEs. These and other results aimed to create a better understanding of the fate of PBDEs during the cooking of food and consequently to improve the assessment of the human exposure to PBDEs and their metabolites. The methods and techniques developed for this purpose are also suited to be used for other pollutants.
