Internal spin degrees of freedom play a fundamental role for various many-body effects in nature. Quantum gases are ideally suited to study such phenomena in an exceptionally clean and controllable environment. Recent experiments with Bose-Einstein condensates demonstrated novel interaction-driven spin dynamics. Since the constituents of matter are fermions, it is a fundamental question, to which extent such effects also exist in fermionic systems.
This thesis is devoted to the investigation of fermionic spin dynamics. For the first time, spin-changing collisions could be observed in fermionic quantum gases, which were explored in different regimes ranging from the microscopic two-body process to the many-body regime. Experiments with two isolated fermions performed in deep optical lattices have revealed novel multi-flavor spin dynamics and an instability of a band insulator. Furthermore, giant and long-lived spin oscillations, stabilized by Pauli blocking at ultralow temperatures, have been investigated in a fermionic many-body system.
